Project EAT: Turkey Burgers

Tonight we have previously frozen turkey burgers (for how long? don't ask) flavored with a BBQ seasoning packet (how long have I had it? don't ask), and very recently purchased colby cheese. These may be delicious or they may gross, but I won't know until tomorrow when I have one for lunch. But regardless of how they taste (I think), that's two less frozen turkey burgers in my freezer, suckas (just kidding)!

Project EAT: Pasta and Sausage

I had the very last of any Thanksgiving food for lunch so it was time to make a real meal for dinner. Here we have spaghetti, hot turkey sausage, and yummy pasta sauce.

I would also like to share a newly discovered weight loss trick. Ready? Make really spicy food (I put jalapeños in the sauce) so that you have to drink lots of water... and before you know it: you're full! (Of water.)

I know. I'm clever. You can thank me later. :)

I have a sneaking suspicion that pasta may be a mainstay during the next few weeks. I have so much of it. I also have a few jars of sauce and some sausage, but I didn't feel like putting forth that effort this morning, so buttery noodles it is. Breakfast of champions...

Project EAT: Salad

Today I am kicking off Project EAT, which is essentially eating all of the food out of my apartment before I move. The day started fine, I ate the last of my salad and then Thanksgiving leftovers for an early dinner. I still have plenty of food, but I failed to realize that I have absolutely no snacks. None. No chips (which isn't unusual), no triscuits (for shame!), no popcorn... nothing. About five minutes ago I started feeling hungry and went into full panic mode. I'm currently baking the last ten tater-tots from my freezer to snack on, and ate one slice of cheese.

I should note that there's one exception: I am allowed to buy as much bread and milk as I want. I love milk and don't want to give that up, and with bread I can work my way through the peanut butter and jelly/jam/honey/etc. I might need another exception of $5 per week allowance to buy something new, but I'd prefer not to do that. I can't decide... but it's only day one and I've got serious munchies. Damn it.

Tuna-Pasta Salad

If there's one thing I enjoy, it's trying to cook from the weird stuff I have left in my house when a grocery trip is due. I made a version of this recipe, minus the pickle juice or milk... and, oh yeah, I didn't measure anything. I just guessed. So my delicious tuna-pasta salad is chilling in the fridge, and should be delicious for my lunch tomorrow.

No Pain, No Gain

I hurt. I've started Jillian Michael's 30 Day Shred to jump start the weight loss. It's 30 minutes, but it is brutal if you're like me and not used to it. A friend is sending me a copy of P90x tomorrow - so my discomfort will only get worse... and quickly.

All this is good. I need to tone up. So tonight post-workout, I am treating myself to Bell Pepper Nachos. Not as fabulous as the chips and drippy cheese kind, but a nice, healthier alternative. Mangia!

Food Prep

Tomorrow is a coworker's last day at my company. She hasn't been with us too long, but we will most assuredly miss her. To send her off - we are throwing a pot luck lunch! So in preparation, I am doing double duty cooking for both tomorrow and for Sunday's cookout at the barn. At this point in the evening, I'm happy to report that #1 of 2 is completed!

Spicy Bean Salsa!



And now #2 of 2 is done... Creamy Dill Cucumber Salad!



As requested:

INGREDIENTS
1 cup fat-free milk
1/2 cup reduced-fat mayonnaise
1/2 cup reduced-fat sour cream
1 (1 ounce) package ranch salad dressing mix
2 tablespoons dill weed
1/8 teaspoon celery seed
1/8 teaspoon pepper
2 large cucumber, peeled and sliced
2/3 cup sliced red onion, separated into rings

In a small bowl, combine the milk, mayonnaise, sour cream, dressing mix, dill, celery seed and pepper. Stir in the cucumbers and onion. Serve with a slotted spoon. Better when refrigerated overnight.

Weekends

Man, have I been lazy. I have spent countless hours crocheting and copying recipes, I've watched First Knight, Robin Hood, Nine Months and went with Nicole to see Seven Pounds. I cooked squash and Nicole and I cooked Pork Chops, sweet potatoes and spinach. And now I'm purging again: Three trash bags, a trunk of more stuff to go to storage, reorganized some kitchen cabinets, and I'm considering taking on the closet. I haven't worked on work at all. And I should. Really.

First, Seven Pounds. So good. You should see it. Will Smith is incredible. It's hard to give too much feedback without giving the storyline away, but the concept is heavy, maybe unrealistic to some extent (yes, a jellyfish, R), but I still think it was well acted. Really well acted. Now Nicole and I are stoked to see that new Clint Eastwood move (I forget the title) that was shown during the previews. It looks crazy good. And I don't even really like Clint Eastwood.

Second, the pork chops were easy, but note for all: Pork Chops NEED to be on the bottom when layering to bake. They were dry - the major mistake when making pork chops - but they were still tasty. Recipe below.

Orange Pork Chops
- Need: pork chops, oil, sweet potatoes, orange, cinnamon dash dash, salt and pepper
- Brown pork in oil.
- Cut sweet potato into 1/2 inch slices.
- Place meat and potato slices in baking dish and cover with orange slices.
- Bake covered at 350 degrees for one hour or until meat is tender.

Third, Annie, I am so sorry. Here is the lentil soup recipe.

Pam Costa's Lentil Soup Recipe
- 1 package on lentils (rinse well)
- Soak for a couple of hours, then simmer, add salt and pepper (heavy on the pepper) and add three bullion cubes (I did both chicken and beef).
- To make meat balls (not "normal" meatballs), you will need: ground beef (I used turkey), eggs, onions, bread crumbs, little salt.
- Brown meat balls and then add to simmering soup. Cook for an hour or so. Cool. Better when reheated.

Fourth, I'm pondering cooking again today. My choices are:
- Stuffed green peppers
- Stir-fry veggies/rice
- Baked chicken/rice

Lastly, did I mention I am going to CES again? I'm actually not that excited, I think MacWorld and CES are going to be relatively disappointing this year. It's my third year, and it's frustrating to get excited about new gadgets when they never launch, are delayed by a year, or only launch in Europe. I guess I'm not expecting to be surprised. Either way, I'll be mobile-posting to my Facebook page. So if we're friends, enjoy! If not, ask me to be friends now. I leave early Wednesday.

Baked Winter Squash

I'm proud of myself, not that it was hard, but I guess it would have helped if I actually liked squash. It was good, but not my cup of tea. Oh well... anyone want the other half?
